I’ve read a blurb about the e-mail invite & reminder feature, which says that it’s possible to manually send e-mail reminders to invitees, but I’m unable to locate any information about how to do so….please help!

As part of a PRO or Enterprise account, you can select the email invite list and there are two links below the ‘invite message’ area that are to ‘Add Reminder’ and ‘Add Thank you’. They would be on the right side.
